Watermelon Radish & Citrus Salad


1 shallot, minced
2-3 tablespoons white balsamic vinegar
3 watermelon radishes, very thinly sliced (using a mandoline works great)
3 oranges
1/4 cup pistachios, chopped
1/4 cup goat cheese, crumbled
2-3 tablespoons fresh chives, minced
Olive oil


  1. Place the shallot, vinegar and a pinch of salt in a small bowl. Set aside.
  2. Arrange the radish slices on a platter. Try folding them to avoid one flat layer. Sprinkle lightly with salt.
  3. Cut off each end of the oranges. Squeeze over the radishes. Remove the rest of the peel from the oranges. Cut between the membranes of the oranges to remove each slice. Scatter slices over the radish.
  4. Scatter the pistachios and cheese over the platter. Pour the macerated shallots and vinegar over the top. Drizzle 1-2 tablespoons of olive oil over the top and scatter the chives.
  5. Let site a few minutes before serving.
