Quick Summer Sauté


2 tablespoons olive oil
2 cups red onion, chopped
1 cup islander peppers, chopped
1 cup sweet peppers, chopped
2 teaspoons garlic, minced
5 cups eggplant, peeled and diced
½ teaspoon salt
½ teaspoon pepper
2 cups tomatoes, diced


  1. Heat oil in a large nonstick saucepan over medium-high heat. Add onion and peppers; sauté for 3 minutes.
  2. Add garlic, and sauté for 1 minute. Add the eggplant, salt, black pepper, and tomatoes; stir to combine. Cover, reduce heat, and simmer 5 minutes.
