Roasted Pumpkin with Breadcrumbs and Parmesan Cheese

Ingredients:

2 pounds pumpkin, Butternut squash or Kabocha squash, peeled, seeded and diced
¾ cup breadcrumbs
½ cup parmesan cheese
1 teaspoon salt
½ cup olive oil
Pepper to taste

Directions:

  1. Preheat oven to 350ºF. Place a rimmed baking sheet in the oven while preheating.
  2. Place pumpkin or squash in a bowl. Add all the other ingredients and mix until the cubes become evenly coated.
  3. Carefully remove preheated baking sheet and add pumpkin in a single layer and bake for 40-50 minutes until the coating looks brown and crispy.
