1 pound of potatoes, scrubbed and cubed
2 cloves garlic
1/3 cup pumpkin seeds, toasted
1/4 cup parmesan cheese, shredded
1 1/2 cups fresh basil
1/3 cup fresh sage
¼ teaspoon salt and pepper
Juice of 1 lemon
½ cup olive oil
Directions:
Add about an inch of water to a large pot. Put the steamer basket into the pot and bring the water to a boil. Add the cubed potatoes, cover and steam until tender; about 10-15 minutes.
Meanwhile, add the garlic, pumpkin seeds and parmesan cheese to the work bowl of the food processor. Pulse until the garlic and seeds are chopped.
Add the basil and sage leaves, salt, pepper and lemon juice. Turn the processor on and while the motor is running add the olive oil. Taste and season with more salt if needed.
When the potatoes are fork tender transfer to a serving bowl and mix in desired amount of pesto. Gently toss to combine and serve warm.
