2 tablespoon olive oil
1 1/2 pounds Rose Gold potatoes, cubed
1 pint mixed cherry tomatoes
3 sprigs fresh rosemary
3 garlic cloves, smashed
Salt and pepper to taste
Put a large baking sheet in an oven and preheat to 450 degrees.
Toss all the ingredients in a large bowl.
Once the oven is preheated, remove the baking sheet with oven proof mits and add the mixture, placing the potatoes cut side down, and roast for 15 minutes. Flip the mixture and roast for 10 more minutes.
