Potato & Summer Squash Sauté


1 ½ tablespoons canola oil
½ medium onion, diced
1 ½ cups potatoes, halved and thinly sliced
1 tablespoon butter
1 ½ cups summer squash, sliced
2 cloves garlic, minced
1/2 teaspoon smoked paprika
Salt and pepper to taste
¼ cup fresh basil, thinly sliced


  1. Add the oil to a large skillet over medium high heat. Add the onion and potato and cook until they are crisp tender, about 5-6 minutes.
  2. Add the butter, summer squash and garlic. Cook about 4-5 more minutes, until all vegetables are tender.
  3. Turn off the heat and season with smoked paprika, salt and pepper.
  4. Stir in fresh basil and taste. Adjust seasonings as needed.
