Potato Soup with Kale

Rich in nutrients that help fight cancer and other diseases. They are loaded with vitamin C and rich in minerals. Leave their skins on and steam them to retain the most nutritional benefits.


3 T. extra virgin olive oil
1 large onion, chopped
1 ½ lbs potatoes, cut into ¼ inch slices
8 cups chicken broth
1 ½ lbs kale, stems removed and torn into small pieces


  1. Heat 3 tablespoons olive oil in large pot over medium heat. Add onion and cook until tender.
  2. Add potatoes and broth. Bring to a boil, then add kale. Stir until wilted and soup returns to a boil.
  3. Reduce heat and simmer one hour, stirring occasionally.
