Potato Hash with Shiitake Mushrooms


1-2 tablespoons oil olive

2-4 medium sized potatoes, diced

1 onion, diced



2 medium yellow squash, diced

1 cup shiitake mushrooms, stems removed and chopped

2 tablespoons fresh sage, chopped

1 teaspoon smoked paprika

Grated parmesan cheese (optional)


  1. Heat 1 tablespoon oil in a large skillet over medium high. Add the diced potato and onion in a single layer and cook undisturbed for a few minutes so they begin to brown. Season with a pinch of salt and pepper. Stir and continue to cook a few more minutes until the potatoes begin to soften.
  2. Add the squash, mushrooms, sage, smoked paprika and season with salt and pepper; mix thoroughly. Continue browning, turning occasionally. Add 1 more tablespoons of oil if needed.
  3. Cook the hash until all the vegetables are tender. Taste and adjust seasonings. Top with grated parmesan cheese. Serve hot.
