Potato Leek Soup #2

One of my favorite soups is potato leek soup with basil. In fact I never even want to make it without the basil. And yes, this soup is still delicious cold!


1 lb potatoes
3 leeks
1/2 cup chopped basil
olive oil
salt and pepper


  1. Slice leeks to rounds
  2. Chop potatoes into 1/2 inch cubes
  3. Heat some olive oil in a soup pan and add the potatoes and leek rounds, sauté until somewhat browned
  4. Add 3 cups of water (or more if desired)
  5. Let simmer until potatoes are completely cooked
  6. Salt and Pepper to taste
  7. Add chopped basil
  8. Enjoy hot or cold
