½ cup pomegranate seeds
1 Fuji apple, diced
1 avocado, diced
Olive oil & lemon juice to taste
¼ cup chopped walnuts
2 oz. goat cheese, crumbled
Sea salt & pepper to taste
Toss the fruit together and then drizzle with olive oil and a squeeze of lemon. Season with salt and pepper. Add nuts and goat cheese on top.
