Fresh Peas with Pasta & Parmesan


1/2 tablespoon butter
1 1/2 tablespoons olive oil
2 shallots, finely minced
2 garlic cloves, minced
Salt & Pepper
1/2 cup vegetable broth
1 cup fresh peas
1 tablespoons fresh thyme or 2 teaspoons dried
Zest of 1 lemon
1/2 pound of cooked pasta
½ cup parmesan cheese, shredded
½ cup fresh parsley, chopped


  1. Add the butter and olive oil to a large skillet over medium heat. Add the shallots, garlic and a pinch of salt and pepper and cook for 3 minutes.
  2. Add the broth and simmer for 3 more minutes.
  3. Add the peas and cook for 3 more minutes.
  4. Add the thyme, lemon zest and pasta and mix thoroughly.
  5. Add the parmesan cheese and parsley, turn off the heat and mix.
  6. Taste and season with salt and pepper.
