Peach, Cucumber and Avocado Salad


2 cardamom pods

2 cloves

1 teaspoon coriander seeds

1 teaspoon cumin seeds

3 cloves garlic, minced

3 tablespoons parsley, divided

3 tablespoons African Blue Basil, divided

1/2 fresh hot chili pepper, minced

3 tablespoons fresh lemon juice

3 large, ripe but firm peaches, pitted and thinly sliced

2 large cucumbers, seeded and thinly sliced

2 ripe avocados, pitted and sliced

1/3 cup pumpkin seeds


  1. Toast the spices on stovetop for several minutes until fragrant. Remove shell from cardamom and cloves, and grind all the toasted seeds with mortar and pestle.
  2. Add garlic and 1 tablespoon of each herb to mortar and mix.
  3. Chop the rest of the herbs. Mix herbs and chili pepper with lemon juice and spice paste.
  4. Gently toss with peaches, cucumber and avocado, season with salt and pepper, and top with pumpkin seeds.
