Pasta Fagioli with Chard and Turkey Sausage


4 oz. small pasta, cooked al dente
1 can (15 oz.) cooked white beans, drained
2 turkey Italian sausages, browned and sliced into thin bite sized pieces
1 Tbs. olive oil
1 large carrot finely diced
1 medium onion, diced
3 cloves garlic, minced
1 bunch chard, stems removed and roughly chopped
1 bay leaf
1 tsp. dried oregano
8 cups chicken stock
2 Tbs. chopped fresh thyme
Sea salt and pepper to taste
Parmigiano Reggiano for garnish
Optional garnish- drizzle with extra virgin olive oil

Serves 6


  1. Sauté the carrot, and onion in the olive oil until soft. Add the garlic and sauté for 1 minute more. Add the Swiss chard and cover until the chard is wilted
  2. Add the bay leaf, oregano, white beans and the chicken stock. Bring to a simmer and cook for 10-12 minutes.
  3. Add the chopped turkey sausage, cooked pasta and fresh thyme. Season with salt and pepper. Garnish each bowl with freshly grated Parmigiano Reggiano.
