Painted Serpent Cucumber and Cherry Tomato Salad with Fresh Herbs
2 Painted Serpent cucumbers, diced
1 cup cherry tomatoes, halved
½ cup mint
1bunch scallions, both whites and greens, chopped
1 cup Italian parsley, chopped
⅓ cup olive oil
1 lemon, juiced
1 teaspoon sea salt
2 tablespoons sumac
Start by chopping all of your veggies and herbs, and adding them to a large bowl.
Add the remaining ingredients and toss to fully combine.
Serve salad immediately, or store any leftovers in an airtight container in the fridge for up to five days.
