Painted Serpent Cucumber and Cherry Tomato Salad with Fresh Herbs


2 Painted Serpent cucumbers, diced
1 cup cherry tomatoes, halved
½ cup mint
1bunch scallions, both whites and greens, chopped
1 cup Italian parsley, chopped
⅓ cup olive oil
1 lemon, juiced
1 teaspoon sea salt
2 tablespoons sumac


  1. Start by chopping all of your veggies and herbs, and adding them to a large bowl.
  2. Add the remaining ingredients and toss to fully combine.
  3. Serve salad immediately, or store any leftovers in an airtight container in the fridge for up to five days.
