Blackened Onion and Delicata Squash

Ingredients:

2 large sweet onions
2 delicata squash, cut in half lengthwise and seeds scooped out (keep skin on)
Olive oil
Salt
4 tablespoons fresh herbs (sage, thyme, oregano), chopped fine

Directions:

  1. Preheat grill to medium heat. Peel the onions and evenly slice them horizontally into 1/2 inch rounds. Skewer the onion rounds together. Make sure to cut your wooden skewers to a size not much longer than the onion rounds. Brush the rounds with olive oil and salt generously.
  2. Cut seeded delicata squash in 1/2-inch slices. Toss the squash with a bit of oil and salt.
  3. Place onion and squash on the grill. Cook for about 5-10 minutes on each side, adding fresh herbs towards the end to add flavor without allowing them to burn.
  4. Serve onions and squash together hot or room temperature.
