New Potato and Wilted Arugula Salad


new potatoes
olive oil
garlic, chives, or scallions
salt & pepper
splash of balsamic or red wine vinegar


  1. Steam or boil potatoes until just tender, cut into bite sized pieces.
  2. In a skillet heat some olive oil with chopped garlic, and chives or scallions.
  3. Throw in potatoes and a bit of salt, cook for a few minutes.
  4. Finally, toss in the arugula, some fresh pepper and a bit of balsamic or red wine vinegar to taste.
