Whole Grain Mustard Potato Salad


2 lbs. potatoes, diced and cooked until tender in salted water
3 stalks celery, diced
1/2 c. diced red onion
1 bunch parsley, chopped
1/4 c. olive oil
2 T. whole grain mustard
2 T. white wine vinegar
1 tsp honey
Sea salt and pepper to taste


  1. Mix all the ingredients together and chill before serving or serve room temperature.
