Miss May’s Bread


3 c. flour
1/4 tsp. self-rising yeast
1 pinch (or more) salt
1 5/8 c. liquid (can be water, whey, or milk)


  1. Mix all of these ingredients together in a bowl and cover it tightly with plastic wrap.
  2. Let it sit for 24 hours at room temperature.
  3. Oil and flour a pan, with a lid (a dutch oven works great!) Knead the dough and place seam down in the pan. Let it hang out and rise for 2 hours.
  4. Preheat the oven to 400ºF.
  5. Cook for 1/2 an hour with the lid on, 1/2 an hour with the lid off.
