Melon Salsa


3 tomatoes, seeded and finely diced
½ – 1 melon, peeled, seeded and finely diced
1 cup minced red onion
½ – 1 jalapeno pepper, minced
½ cup chopped fresh cilantro
juice of one lime


  1. Optional: diced avocados, cubed stone fruits (ie. peaches, apricots, nectarines), diced mangos, diced sweet pepper, slivered almonds
  2. In a large serving bowl, stir together the tomatoes, melon, red onion, jalapeno and cilantro.
  3. Stir in the lime juice and add salt to taste.
  4. Refrigerate for at least 4 hours before serving for best flavor.
