Mashed squash


1 butternut squash
1 bunch arugula rapini
As much garlic as you like
2 tbs curry powder
Cilantro, finely chopped
Yogurt, plain


  1. Cut squash lengthwise scoop out the seeds, place face down on a baking sheet.
  2. Bake at 350 for 45 minutes. Let cool.
  3. Spoon squash into a bowl.
  4. Chop arugula rapini, add garlic and curry powder.
  5. Lightly saute in oil while mixing the spices until the arugula is wilted.
  6. Fold arugula into squash add salt and pepper to taste.
  7. Finish with a dollop of yogurt topped with a handful of cilantro.
