Marinated Tomato Salad

Tomatoes are our region’s pride and joy. They come in a variety of colors, shapes, sizes and flavors. Tomatoes are high in lycopene, an antioxidant that helps prevent cancer. Enjoy local tomatoes all summer long.


2 large tomatoes, chopped into 1 inch chunks
1 Tablespoon olive oil
1 teaspoon vinegar
5-10 leaves of fresh basil, optional


  1. In a bowl, combine oil, vinegar and basil. Add tomatoes, and toss to coat.
  2. Season generously with salt and freshly ground pepper. Let stand for 10 minutes.
  3. Toss again before serving.
  4. This salad is even better the second day.
