Kiwis are great sliced into a green salad. The fruit provides a welcome contrast to slightly bitter greens this time of year. Kiwis in fruit salad with some winter apples tossed with a little yogurt and drizzled with some honey, is a wonderful side dish at dinner or breakfast all together.
I love to have a good supply of fruit, frozen at its peak of ripeness in bags in my freezer. You can peel the kiwis (leave the skin on if you are looking for a fiber boost!), cube them and freeze them. Like most fruit there are many wonderful benefits to eating the skin. Take any combination of frozen fruit in a blender with a cup of yogurt and the juice of your choice. Blend together and it’s a breakfast on the go.
