Israeli Salad

A great way to use up little bits of vegetables and herbs.

Ingredients:

Use up any left-over herbs and vegetables
Try using carrots, cucumbers, tomatoes, radishes, green onions, red pepper, summer squash, or any other vegetable that does not need to be cooked.

Directions:

  1. The trick is to cut in small uniform pieces.
  2. Toss with 2 T good olive oil, fresh lemon, salt, pepper, and cut up parsley.
