Herb Roasted Sweet Peppers


1 pound sweet peppers

2 tablespoons avocado oil or olive oil

1 teaspoon sea salt

½ teaspoon black pepper

½ teaspoon garlic powder

¼ cup fresh basil, torn or chopped

2 tablespoons fresh parsley, chopped

¼ cup grated Parmesan


  1. Preheat your oven to 400 degrees F. Line a large rimmed baking sheet with foil.
  2. Cut the peppers in half lengthwise. Leave the stem and remove the seeds and membranes with your fingers or with a paring knife.
  3. Place the peppers in a large bowl. Toss them with the oil, salt, pepper, garlic powder, basil, parsley and Parmesan.
  4. Arrange the seasoned peppers in a single layer on the prepared baking sheet.
  5. Bake them until tender, 20-30 minutes. Serve immediately.
