Grim Masala


3 tablespoons olive oil
1 onion, diced
2 tablespoons ginger, minced/grated
2 tablespoons garlic, minced
1 tablespoon cumin
1 tablespoon coriander
1 tablespoon Garam Masala
1 hot pepper, minced
1-14oz can crushed/diced tomato
2 cups cubed pumpkin
1 teaspoon turmeric
Dash cayenne or red chili flakes (if desired)
2 cups water
Salt and pepper to taste


  1. Heat the oil in a stockpot on high, then add onion. Sauté for 2-3 minutes, then turn heat to medium-high and add garlic, ginger and spices. Sauté for 4-5 minutes until fragrant, stirring often. Add minced pepper.
  2. Add tomatoes and a pinch of salt, and cook for 5 minutes.
  3. Add pumpkin, water, and a bit more salt/pepper. Cover pot with lid and cook 10-15 minutes until pumpkin is softened. Adjust seasoning if needed and serve hot.
