Grilled Summer Squash Sandwich

Tis the season for a good sandwich...!

Ingredients:

Summer squash, cooked and thinly sliced
Bread
Arugula
Basil
Tomatoes (optional)

Directions:

  1. On some toasted bread, layer aoli (or other spread of your choice), arugula, a couple leaves of basil, and summer squash—to cook the squash cut thin, lengthwise and either saute on high with a splash of tamari, or put on the grill for a few minutes after marinating in tamari.
  2. And when tomatoes come in, no harm in throwing a few slices on there as well.
  3. Enjoy!
