Grilled Peppers

Ingredients:

4 red, yellow, and/or orange sweet peppers
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon ground pepper
¼ cup fresh parsley, chopped
2 cloves garlic, mints

Directions:

  1. Heat grill to medium heat.
  2. Cut each pepper lengthwise into quarters; discard stems and seeds.
  3. In medium bowl, toss peppers with oil, salt, and black pepper.
  4. Place peppers, skin side up, on hot grill rack.
  5. Cover grill and cook peppers 4 to 5 minutes or until beginning to soften.
  6. Turn peppers over; cover and cook 3 to 4 minutes longer or until slightly charred.
  7. As peppers are done, return to same bowl.
  8. Add parsley and toss to coat.
