Mixed Greens with Grapefruit Vinaigrette & Avocado


Grapefruit Vinaigrette

1 teaspoon finely chopped shallot

3 tablespoon fresh grapefruit juice (use juice from half of the grapefruit listed below)

½ to 1 tablespoon honey

2 tablespoons olive oil

½ teaspoon Dijon mustard

Salt and pepper, to taste


4 oz. salad mix

1 grapefruit, one half peeled and segmented and the other half juiced

1 avocado, sliced

4 oz. chevre goat cheese

2 tablespoons toasted pine nuts

3 scallions, sliced


  1. Prepare vinaigrette ingredients in a blender or a food processor until well combined. Taste and season with salt and pepper.
  2. In a large bowl, add the salad mix and half the vinaigrette. Toss to coat greens.
  3. Add the grapefruit segments and avocado slices and lightly toss to combine.
  4. Top with the cheese, pine nuts and scallions.
  5. Pour desired amount of the rest of the dressing over the top of the salad. Serve immediately.
