Sautéed Greens with Dried Apricot


1 tablespoon coconut oil
1/2 yellow onion, chopped
1-2 cloves garlic, finely chopped
1 tablespoon cumin
4 Good Hummus sundried apricots, finely sliced
1/2 cup low sodium broth
4 cups of spinach
1/4 teaspoon salt (plus more to taste)


  1. Heat coconut oil in a pan over medium high heat. Add onions and a pinch of salt, sautéing for 2-3 minutes.
  2. Reduce heat slightly and add garlic, cumin, and apricots and continue to sauté for another 2 minutes.
  3. Add broth and greens, salt, and pepper and cover the pan, allowing the greens to steam for about 3-5 minutes.
  4. Remove lid and stir greens with the other ingredients to incorporate everything together.
