Pan Seared Green Tomatoes with Goat Cheese & Chives

This is a healthy and delicious alternative to the classic southern fried version.

Ingredients:

1 large green tomato, sliced into 1/2 inch thick slices

1 tablespoon olive oil

1 tablespoon chopped chives

3 oz. goat cheese

Salt & pepper

Directions:

  1. Warm a cast iron skillet and add the olive oil.
  2. Season the tomato slices with salt and pepper and place in the pan. Allow to brown on each side for about 2-3 minutes.
  3. Add crumbled goat cheese and fresh chives to each.
  4. Place a lid over the skillet and turn heat to low until cheese is warm. Serve as a side dish.
