Green Salad with Grapefruit Vinaigrette


1 large head lettuce
Fava greens
1 avocado, cubed
1 grapefruit, segmented
¼ cup honey goat cheese, crumbled
¼ cup toasted pumpkin seeds
¼ cup grapefruit juice
1 tablespoon honey
1 tablespoon Dijon mustard
½ teaspoon salt
¼ teaspoon pepper
7-8 tablespoons olive oil
1 shallot, minced


  1. Wash, chop and dry lettuce.
  2. Arrange lettuce on a platter
  3. Pull fava greens off of stalks, wash, dry and add to lettuce
  4. Top with avocado, grapefruit, honey goat cheese and toasted pumpkin seeds.
  5. Add all of the dressing ingredients into a small jar and shake until well combined.
  6. Pour dressing over salad and enjoy!
