Green Peppers and Tomato Salad


2 green bell peppers, seeded and cut into 1/2-inch dice
3 tomatoes, seeded and diced
1 small onion, finely chopped
1 garlic clove, minced
1/2 cup parsley, coarsely chopped
1 tablespoon lemon juice
1 tablespoon red wine wine vinegar
3 tablespoon, olive oil
Salt and Pepper to taste
1 teaspoon ground cumin


  1. Combine peppers, tomatoes, onion, garlic and parsley in a bowl.
  2. In a small bowl whisk together lemon juice, vinegar, oil, salt, pepper, and cumin.
  3. Pour dressing over pepper mixture and toss well.
  4. Taste to adjust seasoning and serve.
