Grapefruit, Arugula & Avacado Salad

Ingredients:

2 grapefruits, cut into supremes (use a paring knife, cut between the membranes and lift out your supreme grapefruit wedges.)*See below for instructions on how to cut into supremes.

2 avocados, diced

3 oz. arugula

4 oz. chevre goat cheese

Pinenuts (optional)

Good olive oil, sea salt & pepper

Directions:

  1. Toss the arugula, grapefruit and avocado in a bowl with just enough olive oil to coat. Add sea salt and pepper and place in a salad bowl or a platter and top with chevre and pinenuts.

Cook’s Tip for making those perfect grapefruit segments for salads:

  1. Use a chef’s knife to slice off the top and bottom of your grapefruit.
  2. Place your grapefruit upright on the cutting board with a cut side down.
  3. Cut off the skin around the grapefruit.
  4. Once all the pith is removed, you’ll be able to see the membranes between each grapefruit wedge
  5. Using a paring knife, cut between the membranes and lift out your supreme grapefruit wedges.
