Gazpacho

Ingredients:

3 pounds vine ripe tomatoes
1 pound cucumbers, peeled, seeded and chopped
½ cup onion, chopped
1/3 cup sweet pepper, chopped
½ cup basil
½ tablespoon dried oregano
2 ounces red wine vinegar
3 ounces olive oil
Salt & pepper to taste
2 teaspoons smoked paprika

Directions:

  1. Combine all ingredients in a large blender and puree in batches if needed. Adjust seasoning and chill.
