Garlicky Sauteed Greens

One of the fastest, healthiest, and most delicious ways to prepare your dark leafy greens that are high in protein, iron and fiber!

Ingredients:

2 large bunches greens (chard, collards, kale, mustard or spinach)
1 Tbs olive, grapeseed, or canola oil
4 cloves garlic, thinly sliced
Few pinches red pepper flakes
optional: 1 Tbs sherry vinegar or cider vinegar
salt and pepper to taste

Directions:

  1. Rinse greens well. Tear or cut leaves away from stems and discard stems. Coarsely chop.
  2. Heat oil in a large skillet over high heat. Cook garlic and pepper flakes in oil briefly, then add greens, a few handfuls at a time as the greens begin to shrink, continually stirring.
  3. Stir in vinegar, if using, salt and pepper. Cover. Cook until just tender, 2-10 minutes, depending on the type of greens and your preference.
