Sautéed Garlic Kale with Quinoa & Roasted Mushrooms


2 cups mushrooms of your choice (shiitake, oyster, king), whole or chopped if needed
Olive oil
Sea salt
½ cup red onion, diced
1 bunch kale, stems removed and sliced
Chili flakes
3 garlic cloves, minced
1 cup cooked quinoa
Lemon wedge
Fresh parsley, chopped


  1. Preheat oven to 450 degrees. Season mushrooms with olive oil, salt and pepper and roast for 5-10 minutes. Check on them after 5 minutes.
  2. While mushrooms are roasting, saute the red onion in olive oil until softened. Add kale, salt, pepper and pinch of chili flakes. Saute until kale is tender, about 3-5 minutes. Add garlic and saute 1 minute more.
  3. Fold in cooked quinoa to heat.
  4. Season your kale-quinoa with additional salt, pepper as needed, a nice drizzle of finishing oil and a squeeze of lemon. Then top with the roasted mushrooms and parsley.
