Green Garlic & Dandelion Soup


1/4 cup olive oil
1 cup white or yellow onions, julienned
Salt and pepper
3 cloves garlic, minced
1 bunch dandelion greens, chopped
1 bunch green garlic, sliced
2 cups spinach, chopped
1 quart vegetable broth
Grated gouda cheese
Lemon oil


  1. In a large pot over medium low, heat olive oil and onions with a pinch of salt and pepper until onions are translucent, tender, and sweet.
  2. Add minced garlic and cook 1 minute. Add the vegetable broth and bring to a boil.
  3. Add dandelion greens, green garlic and spinach. Cook just until dandelion leaves and spinach are tender.
  4. Use an immersion blender and blend until smooth.
  5. Add another pinch of salt and pepper, sprinkle with grated gouda cheese and drizzle with lemon oil.
