6 organic eggs, cracked and whisked
2 cups blanched chard
1⁄2 c. grated cheese of your choice
1⁄2 c. onion
2 T. olive oil
Fresh herbs, chopped
Sea salt and pepper
Serves 6
Directions:
In a nonstick and oven proof pan, sauté the onion in the olive oil. Add in the chopped blanched chard
Add half the cheese to the whisked eggs and pour over the veggies in the pan.
Add the fresh herbs and the remaining cheese. Cook until set on the stove top and then transfer to a 350 F preheated oven.
Cook for about 10 minutes until set.
Remove from oven and slide out onto a platter using a rubber spatula.
