Frisée & Greens Salad with Grapefruit Dressing


1/2 cup grapefruit juice
1 tablespoon honey
1/4 teaspoon fine sea salt
1/4 teaspoon ground black pepper
1/2 cup extra-virgin olive oil
1 teaspoon grapefruit zest
1 tablespoon finely chopped fresh flat-leaf parsley
1 head roughly chopped frisée
1 head roughly chopped romaine
1 head roughly chopped butter lettuce
1/4 cup thinly sliced red onions
1 avocado, cubed
1/4 cup crumbled goat cheese
1/4 cup chopped toasted hazelnuts


  1. In a small bowl, whisk together juice, honey, salt and pepper. Drizzle in oil while continuing to whisk constantly, then stir in zest and parsley. Set aside.
  2. In a large bowl add frisée, romaine, spinach, onions and desired amount of dressing and toss gently to coat.
  3. Add the avocado and goat cheese and gently toss. Transfer salad to plates, garnish with hazelnuts and serve.
