Fresh Bean Salad

Green beans can be boiled, steamed, stir-fried, or sautéed. They are great on their own or combined with other vegetables. All beans are a good source of protein, and green beans are also high in potassium.

Ingredients:

3 cups of green beans, washed and cut into 1 inch pieces
1 cup each of two kinds of cooked or canned beans (black, navy, garbanzo, lima)
1 Tablespoon olive oil
1 small red onion, finely chopped (optional)
1 teaspoon vinegar
1 Tablespoon freshly chopped parsley (optional)
Salt
Pepper

Directions:

  1. Heat pan over medium heat. Add half the olive oil and then the green beans.
  2. Season with salt and stir occasionally for 4-5 minutes, until tender.
  3. Meanwhile, in a bowl combine the rest of the oil with vinegar, parsley, another pinch of salt and pepper to taste.
  4. Add onion, beans, and cooked green beans.
  5. Toss and serve warm, room temperature or cold.
