Florets Polonaise


1 1/4 lb broccoli
1/4 cup butter or 4tbsp of olive oil
Finely grated rind of 1/2 lemon
2 garlic cloves
1/2 cup breadcrumbs baked
2 eggs hard boiled
salt and pepper


  1. Trim the vegetables and break into equal size florets. Place the florets in a steamer over a pan of boiling water and steam for 5-7 minutes, until just tender.
  2. Toss the steamed vegetables in the butter or oil and transfer to a serving dish.
  3. While the vegetables are cooking, mix together the lemon rind, garlic, seasoning and baked breadcrumbs.
  4. Finely chop the eggs and mix together with the remaining ingredients.
  5. Sprinkle the chopped egg mixture over the cooked vegetables and serve at once.
  6. Grind fresh black pepper as a final touch and salt to taste. I like to put just enough salt to bring out the flavors and let people put more if they are a salt lover.
