Fennel Salad with Radish & Turnip


1 teaspoon lemon zest
1/4 cup olive oil
1 tablespoon white wine vinegar
Salt and pepper
3 radishes, trimmed and thinly sliced
3 salad turnips, trimmed and thinly sliced
2 tablespoons capers, drained and rinsed
2 scallions, thinly sliced
Fennel fronds


  1. In a medium bowl, whisk together the lemon juice and zest, olive oil, vinegar and season to taste with salt and pepper.
  2. Add the fennel, radish, turnip and capers to the bowl and toss to combine.
  3. Sprinkle with the scallions and fennel fronds and serve.
