Fava Green Pesto


2 cups fava greens, packed
½ cup toasted pine nuts or walnuts
3 cloves of garlic
⅓ to ½ cup extra virgin olive oil*
⅓ to ½ cup lemon juice*
½ cup parmesan cheese*
½ teaspoon sea salt


  1. In a blender or food processor, combine the ingredients, which makes about one pint of finished fava pesto.
  2. Store in the fridge up to a week or freezer for up to 6 months.

*Start conservatively, adding more oil and lemon juice while blending until the desired consistency is reached. The amount needed may vary depending on how tightly the greens are packed.

*If freezing, omit parmesan cheese. When ready to use, thaw and blend in cheese.
