Crostini:
One baguette (cut diagonally)
1/4 cup olive oil for brushing
Brush one side of bread slices with olive oil; toast (oil side up) at 350ºF for 10-15 minutes, until golden. Alternatively, grill the bread on a stovetop or outdoor grill until grill marks form.
Fava Puree:
1/3 cup olive oil
1 cup fava beans (shelled)
2 clove garlic
1/2 tsp lemon zest
2 tsp lemon juice
1/2 tsp sea salt + fresh gr. Pepper
3 ounces Pecorino Romano cheese for garnish
Yield: 2 dozen
