Farmer Tom's Salad Dressing

Everyone should have a dressing that is their standard “go-to”, when they crave a salad – this one is mine. I like it because it hits many flavors on the palate’s spectrum— sweet, sour, savory, smooth — and it’s never the same twice...

Ingredients:

In a glass jar, with a lid, combine:
1/2 cup of olive oil
1/3 cup of vinegar (balsamic, apple cider or red wine)
2 tablespoons of sweetener (brown sugar, honey or maple syrup)
1 teaspoon of prepared mustard (regular yellow or Dijon—whatever’s in the fridge)
1 teaspoon of soy sauce
1 clove of garlic
A few shakes of oregano (dried or fresh)

Directions:

  1. Shake all the contents together in the jar to emulsify before serving; or, allow it to sit for few hours in the fridge so the flavors steep. This dressing can be used multiple times if stored in the fridge between servings. I like to customize each dressing to suit my salad at hand. A different vinegar? A splash of lemon, orange or fruit juice for flavor? Added sugar for a sweeter taste?
