Fancy Grilled Cheese

Grilled cheese sandwiches aren’t just for lunch anymore. They can be spiced up, fancied up, and healthied up (well only sort of, they are based on fried bread).

Ingredients:

*Begin with the bread. I am partial to whole grain breads (Great Harvest and Grateful Bread make some nice ones), but a good French bread also works.
*Slightly wilt some Arugula (that is apply some heat, don’t just leave it on the counter until it is floppy).
*Select your condiment of choice—a sundried tomato and chipotle pepper spread is great in this combo, though spicy mustard will also do. If you are a fan of the mayonnaise, at least go for a garlicky aioli.
*And of course—The Cheese. I like a sharp cheddar, but if you are going all out brie is mighty tasty.

Directions:

  1. Butter the outside of the bread, place the ingredients between the slices of bread, and grill to perfection.
  2. Serve with a seasonally appropriate soup and you have a delicious and quick meal containing fruits and veggies.
