Scrambled Eggs with Winter Onions & Parsley


1 T each butter and olive oil
1 medium winter onion, sliced in half and then chopped ( use white and pale green parts)
4 eggs, whisked with a pinch of salt and pepper
Chopped parsley
Sea salt and pepper


  1. Melt butter and oil in a pan.
  2. Add the onions and sauté until softened.
  3. Add the eggs and stir until just cooked through.
  4. Turn off heat and add the parsley.
  5. Serve with buttered toast.
