Curry Scrambled Eggs with Green Garlic and Spinach


6 eggs
1/4 cup milk
Salt and pepper to taste
1/2 teaspoon garlic powder
1 teaspoon curry powder
Splash of olive oil
1/2 spring onion, minced
2 green garlic, minced
1 tablespoon butter
2 cups fresh spinach, chopped
Grated parmesan cheese


  1. In a bowl, whisk eggs with the milk, salt, pepper, garlic powder, and curry.
  2. Heat oil in a skillet over medium. When oil is hot, add spring onion and green garlic and sauté for 3 minutes. Add the butter and stir until melted.
  3. Add the spinach and sauté 1 minute. Pour in the eggs, and cook, stirring constantly until firmed to desired temperature, 3 to 5 minutes.
  4. Top with grated parmesan cheese.
