Dragon Tongue Bean with Pepper Relish


1 pound of dragon tongue beans
2 tablespoons olive oil
1/2 chopped pistachio nuts
1 cup of very finely diced fresh parsley
3/4 cup diced sweet pepper


  1. Wash, snap and boil beans for 6 minutes.
  2. In a separate frying pan add the remaining ingredients. Fry together for about 5 minutes, just enough for the parsley to wilt and the peppers to soften.
  3. Toss the relish with the freshly boiled beans in a large serving bowl.
  4. Add some cracked pepper and sea salt.
  5. Enjoy!
