Delicata Squash & Peppers


1 delicata squash, seeded and thinly sliced
1 tablespoon extra-virgin olive oil
2 Stocky Roaster peppers, diced
1/2 medium Great Western onion, diced
4 large sage leaves, chopped
1/2 teaspoon chili powder
1/2 teaspoon cumin
Salt and freshly ground pepper


  1. Heat the olive oil in a large skillet over medium heat. Add the squash, cover, and cook for 6-8 minutes, stirring occasionally.
  2. Remove the cover and stir in the peppers, onion and sage. Sauté for 3-4 minutes.
  3. Sprinkle with chili powder, cumin, salt and pepper.
